Nut Fillings

 
I.
1 lb ground walnuts
3 egg whites, stiffly beaten
1/2 c honey
1 c sugar

or

II.
2 1/2 c ground walnuts
1/2 tsp cinnamon
3/4 c sugar
1/3 c evaporated milk

or

III.
2 1/2 lb ground nuts
2 c sugar
rind of 1 lemon
2 tbsp melted butter

or

IV.
2 lbs ground walnuts
2 c sugar
4 tbsp milk


In a small bowl, combine filling ingredients and stir to blend thoroughly.

 
or

V.
2 c ground walnuts
1/3 c milk
4 tbsp brown sugar
3 egg whites, stiffly beaten
1 tsp cinnamon
1 c sugar


Mix nuts, brown sugar, cinnamon and milk into a paste over heat.  Beat egg whites till stiff, gradually adding 1 cup of sugar.  Fold into the filling paste.

 
or

VI.
3 egg whites, stiffly beaten
1 c brown sugar
6 tbsp butter
1/2 lb walnuts
8 lg graham crackers, rolled
1 tsp maple syrup (optional)


Blend all ingredients, except the egg whites.  Beat egg whites until stiff.  Fold egg whites into filling mixture.

 
or

VII.
1 tsp sugar
1/2 lb ground nuts
1/2 c water
raisins


Bring water to a boil, add sugar and continue to cook for a few minutes.  Add nuts and raisins.
