Tvarhove Knedleky 
(Cottage Cheese Dumplings)

 
1 carton dry cottage cheese (12 oz)
1/6 cup flour
1/2 tsp salt
1/4 cup sugar
1/2 tsp cinnamon
3/4 cup cracker crumbs
2 eggs
Coating:
1 cup graham cracker crumbs
1/4 stick butter
1/4 cup sugar

To make the topping, brown the crumbs in butter.  Remove it from the heat and add the sugar.

Mix together all ingredients for cheese balls.  Form the dough into balls (about 2 inches in diameter) and roll them in flour.  Cook them in gently boiling water until the ball comes to the surface.  Remove them from the water and roll the balls in the topping.
