Skvarkove Pagace (Biscuits)

 
3 1/2 c flour
2 eggs
salt, to taste
butter (walnut-size)
1 yeast, dissolved in 1/4 cup cream
cream to make soft dough
1/4 lb cracklings (pork rind)

Mix flour and salt.  Add shortening, eggs and yeast.  Make a soft dough.  Roll out on a flour board to about 1/4-inch thick.  Spread 1/3 of cracklings over 1/3 surface of the dough.  Fold 1/3 of dough over center third and then take the other end and fold it over the center third, too.

Cover the dough and let it rest about 15 minutes.  Roll it out as before, spread cracklings and fold as before.  Let it rest 15 more minutes.

Roll the dough out to about 1/2-inch thickness and cut it with a biscuit cutter.  Place the pieces on a greased cookie sheet.  Let it rest a 1/2 hour.

Before putting the biscuits in the oven, brush then with beaten egg.  Bake them in a 450F oven for 10 to 15 minutes.
